Production
Harvested by hand. Pre-fermentation
maceration at 15ºC and fermentation at 25ºC in temperature-controlled
stainless steel vats. Clarification, filtration and subsequent
ageing for 16 months in American and French oak casks.
Organoleptic characteristics
Deep bigarreau cherry colour with medium-high depth and
purple hues. Clean and brilliant. Complex, delicate aromas that
are both intense and elegant. The mature fruit with a soft lactic
tone and spiciness, where one can distinguish the aromas of
red and black fruits over an elegant bed of fine wood, mean
this wine offers a good balance of fruit and wood. It is flavoursome
and tannic to the taste, with a powerful, expressive and fruity
finish. This is a balanced and silky wine.
Its aftertaste is long and pleasant, leaving a slightly toasted
nuance. Avenencia is a wine with its own character and personality.
It is challenging and harmonious in pleasure and in time; a
true gift for the senses.
Recommendations
This wine is at its peak when enjoyed between 16 and
18ºC.
We recommend that the wine be decanted before consumption.
It is an ideal accompaniment for game, red meat, patés and cured
cheese.
